Wine Profile
Tasting Notes
From the exceptional 2020 growing season, this Cabernet Sauvignon demonstrates the sumptuous balance to be expected from a cool climate red. Aromas of black cherry and cassis balance along spice notes. The palate is plush and inviting with cherry as raspberry preserves supported by silky tannins and a mouthwatering texture. Drink now or cellar for several years. Best serving temperature 16 to 19 degrees.
Winemaker Notes
The 2020 vintage was perfect start to finish with a hot, dry summer followed by a long, warm fall. This allowed the grapes to be left on the vines until late November which helped to develop maximum flavours.
Food Pairing Notes
Pair with rich dishes such as grilled ribeye steak or prime rib where the tannins in the Cabernet Sauvignon blend beautifully with the proteins and fat in the red meat, with the result of softening the wine and making it taste smoother. Or pair with stronger, more gamey meats such as venison or wild boar. For cheeses, strong cheeses such as aged cheddar or parmesan can balance the wine's intensity and echo its nutty, savory undertones.
