		Tasting Notes
			On the nose this wine shows hints of sweet mint, black tea, cherry and toasted oak spices. On the palate the wine is juicy and round. Soft tannins and a silky texture on the finish. Best Serving Temperature 16 to 19 degrees.
		Winemaker Notes
			This is an 8 barrel wine from fruit sourced from our Home Farm and another top vineyard located in Niagara-on-the-Lake. The wine was fermented in small batch 1-ton bins with frequent lees stirring and malo-lactic fermentation. Matured in seasoned Canadian Oak barrels for 17 months. The wine was laid down for 12 months post bottling to allow for full integration.

			Merlot is a great accompaniment to dishes made with dark meat such as duck or with barbecued foods such as hamburgers and steaks such as filet mignon. the wine also pairs well with coq au vin. Merlot is a very cheese friendly wine and can be enjoyed with cheeses as diverse as gouda, gruyere, brie or Havarti.
