A Bordeaux-styled wine produced from wine matured in 100% Canadian Oak, the 2014 Canadian Oak Meritage is an assemblage of 38% Cabernet Sauvignon, 31% Cabernet Franc and 31% Merlot. Harvested mid-November primarily from fruit grown on the home farm, the must was fermented in 1 tonne open bins, which provided further extraction of varietal flavours during maceration. After a period of 24 months in predominantly new Canadian Oak barriques, a six barrel blend was bottled under screw-cap with minimal filtration to ensure greater expressions of the fruit as well as the oak influence. A Meritage with finesse.
