Tasting Notes
A fruit and herbal medium to full-bodied wine with aromas and flavours of strawberries, blackberries, black cherries, black tea, eucalyptus, menthol, spice, vanilla and mocha that combine on the palate to produce a light acidity and smooth finish. Best serving temperature 16 - 19 C
Winemaker Notes
The Winemaker’s Art is simply put, an expression of the winemaking artist and the desire to exemplify a particular wine which exceeds beyond the given boundaries. The 2013 Cabernet Sauvignon was produced from fruit harvested from two exceptional Niagara-on-the-Lake vineyards, one being the remarkable home farm, mid-November with Brix exceeding 24 o Bx. Grapes were crushed to open bins for fermentation prior to pressing to barrels for oak maturation over a period of 16 months. Following tasting trials, 13 barrels of French (54%), American (38%) and Canadian origin (8%) were selected, principally seasoned barriques, for the assemblage. The wine was bottled under screw-cap with minimal treatment for preservation of the intense abundance of flavours and intoxicating aromatics
