The second vintage of our first sparkling wine is an aromatic white 100% Sauvignon Blanc, made using the cuvee close method. An abundance of citrus fruit with yeasty notes and a wonderfully crisp and refreshing finish.
Bubbly, crisp and refreshing. Aromas and flavours of citrus (lime, lemon and grapefruit), grass, flint and yeast. A crisp and refreshing finish on the palate. Best serving temperature 6 to 9 C.
This aromatic Sparkling Sauvignon Blanc was made in the Cuvé Close method from fruit harvested from the Niagara Peninsula. Fermented in stainless steel down to dryness. Following stabilization and sterile filtration, the wine base underwent secondary fermentation to 6.5 g/L residual sugar in specialized pressurized tanks followed by battonage.
