Muselet is the French word for the wire cage that fits over the cork in a bottle of sparkling wine, a fitting name for our sparkling wines made in the traditional method. Muselet Rosé is made from 100% Pinot Noir grapes from a small vineyard near the winery in Niagara-on-the-Lake that we look after. It is classified as Brut but is rich in flavour.
A lovely round mouthfeel with fine bubbles (mousse) and good length balanced by acidity. Aromas and flavours of strawberry, tart cherry and rhubarb with underlying characteristic yeasty notes. Best serving temperature 6 to 9 C.
Grapes were harvested late September 2017 at 20.8 Bx and whole berry pressed. The juice was fermented at cooler temperatures to dryness with no induced malolactic fermentation. The base wine was then closed with the liqueur de tirage and inoculated for secondary fermentation in bottle. After lying down on lees for 16 months, it was riddled and disgorged, with a dosage to bring the residual sugar to 7.4 g/L prior to final corking.

Oysters, caviar, hors d'oeuvres, salmon, scallops in creamy sauce, grilled shrimp, fatty, fried or spicy dishes. Not to forget enjoying with finger food canapes!
