Cabernet Sauvignon and Cabernet Franc were hand harvested in late October from our Home Farm in Niagara-on-the-Lake. The grapes were fermented in small, open bins with daily pigeage and malolactic fermentation then pressed to oak barrels for 19 months maturation. Two barrels of Cabernet Sauvignon and one barrel of Merlot were selected for blending.
