Aromas and flavours of orange blossom, lime peel, lemongrass, ripe nectarine, mandarin, white grapefruit, gooseberries, green orange, and a little of the typical varietal green grass. Its acidity is vibrant and crisp producing a beautiful mouthfeel. Best Serving Temperature 7° to 10°C.
Produced from fruit harvested 12th October, 2018 from the upper portion of the Sauvignon Blanc field located at our Winery farm vineyards at 21.8 Brix. The juice was fermented to dryness, using a specialty yeast at cooler temperatures in a stainless steel tank with a resultant 13% alcohol. This allowed the vibrant aromatics and citrusy herbal flavours of this cool climate Sauvignon Blanc to be expressive. The wine was cold and heat stabilized before being bottled through a sterile filter under screw cap.
Food Pairing Notes
Probably the best varietal to match with asparagus and goat cheese. The cut grass notes and the refreshing acidity go well with salads, particularly those with herb vinaigrettes and peppery baby arugula.
