Often called the "King of Grapes", Cabernet Sauvignon is one of the three Bordeaux varietals we use to make Strewn red wines. Cabernet Sauvignon is a cross between Cabernet Franc, another of our red varietals , and white Sauvignon Blanc.
It can be used to make full bodied wines with firm tannins and medium acidity. Niagara is considered a cool climate wine region and our growing conditions can fluctuate considerably from vintage to vintage. While Cabernet Sauvignon can make full bodied wines with firm tannins and medium acidity, in some years the wines will be be lighter and ready to drink sooner.
The 2017 Cabernet Sauvignon from our Premium line has beautiful, complex aromas and flavours and a smooth palate. It can be enjoyed now and for the next few years.
Fully ripe flavours of dark fruit (plum, cherry and blackberry) are joined on the palate by savoury notes of leather, tobacco, with hints of spice and soft smokiness. The texture is smooth and gentle with just enough tannin grip and tanginess for a fresh, long finish.
A total of 274 cases were made.
Produced from fruit harvested at the Home Farm on 22nd and 23rd November, 2017 at an outstanding 24.9o and 25.8o Bx for the clay and sandy blocks respectively. After fermentation in small stainless steel bins with daily pigéage and malo-lactic fermentation, the wines were pressed to oak barrels. After 18 month maturation, an blend consisting 58% American and 42% French of primarily seasoned oak barriques was assembled and bottled.
