The fruit, from a single Niagara-on-the-Lake vineyard, was harvested the 1st of November, having hung for an extra fortnight to capture further varietal flavours. Maintained at cool temperatures in stainless steel to retain the fresh citrus and tropical nuances. Fermented to dryness while keeping a luscious palate, which balances the natural acidity.
