Tasting Notes
A complex and creamy wine. The aroma and flavours of green apple, orange blossom, orange peel, coconut, vanilla, spice, butterscotch, and caramel interplay beautifully with its acidity, producing a wine with a long, smooth and creamy finish.
90 Score "This is one of three wines made from the same lot of Chardonnay grapes that were then split into three parcels and vinified in three different types of oak, this one being 100% French oak. At 14.8% ABV, this is a heavy-hitter in terms of weight and depth of flavour however, it has less tropical fruit than the American oak version and more orchard fruit such as golden and red apples. Winemaker Notes
The exuberant season of 2016 produced fruit of overt flavours. The grapes from the Home Farm were pressed to tank for cold settling. The juice was subsequently racked to new and seasoned French Oak barriques before being individually inoculated with specially selected yeast. Following primary fermentation, with slightly delayed malo-lactic fermentation, the barrels were battonaged occasionally to enhance the richness and weight of the maturating wine over a 10 month period. After assemblage trials, 4 new and 2 one-year old barrels were blended, with stabilization and filtration, before bottling under cork.

The wine calls out for salmon! The creaminess of the wine is a perfect complement for cream-based dishes such as Linguine with Alfredo Sauce, Lobster or Poached Salmon with Bechamel Sauce
