A crisp and fruity wine where the aromas and flavours of green apple, melon, papaya, vanilla, toasty oak, spice (bourbon), and coconut balance very well with its crisp acidity and smooth finish.
A true rarity of a wine produced from fruit grown in the stellar 2016 vintage from grapes harvested from the excellent Home Farm on 12th October, 2016 measuring a Brix level of 24o, with a smaller parcel of fruit picked 5th October, 2016 from a high quality vineyard located on the Niagara Bench at 23.3o Bx. Pressed to tank for cold settling, juice was subsequently racked to new and seasoned CanadianOak barriques, before being individually inoculated with specially selected yeast. Following primary fermentation, with slightly delayed malo-lactic fermentation, the barrels were battonaged occasionally to enhance the richness and weight of the maturating wine over a 10 month period. After assemblage trials, two new barrels, one 2-year old and one 3-year old barrel were blended, with stabilization and filtration before bottling under cork.

The wine's refreshing aspect and dry finish will counteract the richness of cream-based dishes including soup, pasta, gnocchi, fish and poultry.
