Winemaker Notes
A two-barrel blend of Cabernet Sauvignon, sourced from the Home Farm and crushed to open small stainless steel bins. Fermented with malo-lactic fermentation in the open vats with daily pigéage over three weeks. Pressed to oak for maturation over a 20 month period. Two specific barrels which represented the desired bold nature of The LIMITED series of wines were selected, one being sourced from the clay and one from the sandy portions of the Home Vineyard
