Grown during the hailed 2015 vintage following a brutally harsh winter, the berries for the 2015 Merlot Terroir while low in yield were high in quality. Harvested 100% from the Home Farm at a premium yield of 1.3 tonne/acre with 23.3 Bx, the juice was inoculated with speciality yeast followed by malo-lactic fermentation. After a maturation period of 19 months, 3 barrel French oak barriques (2 new / 1 seasoned) were blended followed by racking and minimum filtration in an effort to retain the purity of the fruit. Definitely an age worthy wine, the 2015 Merlot Terroir will further appeal to tasters seeking a bold taste with a firm tannic presence which will soften over time.
Food Pairing Notes
The dark, ripe fruit flavours of the wine will complement red meat dishes that have sauces with similar flavours. The ripe, smooth tannins will balance richness of the sauces.
