The crisp acidity harmonizes well with the aromas and flavours of orange blossom, melon, papaya, coconut, green apple, wet stone, crushed rock, vanilla, caramel, clove, spice and bourbon. The result is a long and lingering finish on the palate.
The starting point for all Terroir Chards is fruit from the Home Farm, harvested 30th October, 2017 at 26.4Bx. The surprise addition in 2017 was fruit from one of our Niagara-on-the-Lake growers, harvested Halloween at 25.4Bx. All the fruit was fermented in new Canadian oak barrels with two specialized yeasts, followed by malo-lactic fermentation. Matured in oak for nine months before barrel selection, blending (3 barrels from the Home Farm and 1 from our NOTL grower), cold/heat stabilization and sterile filtration to bottling line. Laid down in bottle for 20 months before release.
Food Pairing Notes
The wine's refreshing aspect and dry finish will counteract the richness of cream-based dishes including soup, pasta, gnocchi, fish and poultry.
