The Cabernet Sauvignon offers lifted aromas of fresh black currant and blackberry with hints of anise seed and green coffee bean, alongside delicate spice notes from the well-integrated oak aging. The Merlot contributes juicy dark plum fruit notes, leather, licorice, wild violets fine tannins and round texture on the palate leading to a long persistent finish. Recommended Serving Temperatures 16° to 19° C
Merlot, Cabernet Sauvignon and Cabernet Franc were hand harvested between November 15 and 22 from our Home Farm in Niagara-on-the-Lake. The grapes were fermented in small, open bins with daily pigeage (punch down) and underwent malolactic fermentation. The wines were then pressed to oak barrels for 15months maturation. Three barrels were selected for final blending, one new and one seasoned French oak and one new American oak.
