Tasting Notes
A very well balanced wine with aromas and flavours of lime peel, lemon, green apple, white grapefruit and a hint of minerality (crushed rock and wet stone). A tart and long finish is produced by the vibrant acidity and citrus flavours. Best serving temperature 7 - 10C
Winemaker Notes
Produced from fruit harvested from a single vineyard located in Niagara-on-the-Lake. Fermented in two batches, with vastly differing yeast strains at cool temperatures in stainless stain, which allowed for an ultimate blend showing tropical nuances coupled with Riesling's citrus attributes. The Riesling ferments were halted with 8 g/L residual sugar, which gorgeously balances the inherent racy acidity from the 2013 vintage. The wine was subsequently stabilized and sterile filtered to the bottling line.
