Long, rich palate with an assertive tannin structure. Two to three years away from being fully open in the bottle with more mellow tannins. Cellar through 2023.
Brix at Harvest
Complex and full-bodied. Aromas and flavours of blackberries, black cherry, plum, strawberry, vanilla, tobacco, mocha, anise, menthol and eucalyptus, which pair perfectly with the acidity and tannin to create a lingering, flavourful finish. Best serving temperature 16 to 19 C
Fruit for the 2012 Cabernet Sauvignon Terroir was harvested in late October from two outstanding vineyards located in Niagara-on-the-Lake. After 21 months maturation, a 15 barrel assemblage comprising French (53%) and American (47%) oak barrels, of which two-thirds were seasoned barriques, was blended with minimal filtration prior to bottling to retain the true nature of the fruit. An age-worthy wine from an outstanding vintage.
