2015 Terroir Fume Blanc
Brix at Harvest
A medium to full-bodied wine with integrated aromas and flavours of grapefruit, lemon peel, lemongrass, gooseberry, green apple, caramel, coconut and toasty oak. Crisp acidity, smooth tannins and a long finish on the palate.
A small batch blend of Sauvignon Blanc harvested from a single vineyard located in Niagara-on-the-Lake and fermented down to dryness in 2 barriques (one seasoned French and one seasoned Canadian Oak). Left on lees with occasional battonage over an 11 month period to enhance mouth-feel and add complexity. Following oak maturation, the 2 barrels were blended together with subsequent stabilization and sterile filtration before bottling under screw-cap.
