THE VIGNERON DISCOVERY SERIES: LET THE SUN SHINE IN
The VIGNERON DISCOVERY SERIES is a hands-on vineyard program. Guided by winemaker Joe Will, the day begins with an orientation on Canopy Management. Then out in the vineyard each “Vigneron” helps thin the grape canopy. This gives the grape bunches the right amount of sun and air so vital in the making of great wine.
*During the stage of leaf removal, leaves are soft; gloves optional.
Time: 11:00 am – 12:30 pm. Cost: $20 plus tax.

VIGNERON DISCOVERY SERIES: THE GREEN HARVEST
A Vigneron is someone who cultivates a vineyard and makes wine from the grapes. Join Winemaker Joe Will for what is known as the Green Harvest. You work hands-on in the vineyard to thin the grape clusters to concentrate mother’s nature energy where it is needed most -- to the remaining grapes on the vine. Fewer grapes on the vine increases the quality, creating the best possible wines.
After the Green Harvest, the grapes will be crushed to create Ver Jus (pronounced vair-ZHOO) or "Ver juice”. You will undoubtedly pucker up as you taste the tart, fresh green juice of unripe grapes. Ver Jus is a culinary ingredient indigenous to the world's wine producing regions and used as a lemon juice or vinegar substitute to add acidity and flavour to food, including sauces, soups and stews.
